added emulsifiers such as calcium
phosphate, sodium citrate and sodium
phosphate.

processed, so, like most dairy products,
they need to be refrigerated. Processed
cheeses, on the other hand, are full of
preservatives like sorbic acid so they
can be stored for months on the shelves
without refrigeration.

Sargento cheese is made using
time-honored techniques. It's never
melted while it's being made,
preserving that delicious, authentic
Sargento flavor. Processed cheese is
heated to 180 degrees, which strips
the cheese of its flavor. To form
slices, processed cheese is often cooked
into a liquid, pumped into plastic, and
then flattened into a slice.
