Tacos Al Pastor
INGREDIENTS
- 1 tsp. each: chili powder and ground cumin
- 1/2 tsp. garlic salt
- 1 lb. pork tenderloin
- 2 tsp. canola or vegetable oil
- 1 ripe avocado, peeled, seeded, diced
- 1/3 cup each: diced fresh pineapple or drained canned pineapple tidbits, chopped cilantro and salsa
- 8 corn tortillas
- 16 slices Sargento® Ultra Thin Sliced Mild Cheddar Cheese

Combine chili powder, cumin and garlic salt; rub over meat.

Heat oil in an ovenproof (wrap handle in foil) skillet over medium heat until hot. Add meat; cook until browned, about 2 minutes per side. Transfer skillet to a preheated 375°F oven; bake until internal temperature reaches 145°F, 10 to 14 minutes depending on thickness of meat. Transfer to a carving board; tent with foil and let stand 5 minutes.

Meanwhile, combine avocado, pineapple, cilantro and salsa; mix well. Cut meat into bite size chunks. Warm tortillas according to package directions. Immediately place two slices cheese over each tortilla; top with meat and avocado mixture and fold in half.
