Italian Vegetable Heroes
INGREDIENTS
- 1/2 cup pickled giardiniera vegetables, drained
- 1/2 cup sliced ripe olives, drained
- 1/4 cup chopped fresh parsley or fresh basil
- 1/3 cup reduced-calorie Italian salad dressing
- 2 cups (8 oz.) Sargento® Fancy Shredded 6 Cheese Italian Cheese
- 1 loaf (1 lb.) Italian bread, unsliced
- Spinach or romaine lettuce leaves
- 6 oz. sliced Genoa salami or smoked cooked ham
- 1 jar (7 oz.) roasted red peppers, drained
DIRECTIONS

Combine pickled vegetables, olives, parsley and dressing in medium bowl. Add cheese; toss again. Cut bread in half horizontally. Pull out soft bread crumbs from both sides of bread leaving 1/2-inch border; reserve for another use.

Layer spinach leaves, salami and peppers on bottom half of bread. Spread cheese mixture evenly into top half of bread. Close sandwich; cut into serving pieces.
