Bean and Cheese Burritos
INGREDIENTS
- 8 (8-inch) fat free flour tortillas
- 1/2 pound 97% fat free ground turkey breast
- 1 cup chopped red or green bell pepper
- 1 can (15 oz.) black beans or pinto beans, rinsed and drained
- 3/4 cup chunky salsa
- 1/2 cup sliced green onions with tops
- 3/4 teaspoon ground cumin
- 2 cups (8 oz ) Sargento® Artisan Blends Authentic Mexican Shredded Cheese
- Optional toppings: Fat free or light sour cream, chopped tomato, chopped cilantro

Wrap tortillas in foil. Bake at 350°F 10 to 12 minutes or until heated through.

Meanwhile, cook turkey and pepper in nonstick skillet over medium heat 5 minutes or until turkey is no longer pink. Add beans, salsa, green onions and cumin; simmer 8 minutes, stirring occasionally.

Spoon mixture evenly down center of warmed tortillas; top with cheese. Fold bottom of tortilla over filling; roll up. Let stand 1 minute or until cheese is melted.
