Grilled Chicken Caesar Pitas
INGREDIENTS
- 1/3 cup light or fat-free mayonnaise
- 2 Tbsp. chopped fresh basil or 2 tsp. dried basil
- 1 tsp. lemon juice
- 1/2 cup fat-free or light Caesar salad dressing, divided
- 4 boneless, skinless chicken breast halves
- 2 cups shredded or torn romaine lettuce leaves
- 3 small tomatoes, sliced
- 6 (8-inch) pita breads
- 1-1/2 cups (6 oz.) Sargento® Shredded Reduced Fat Mozzarella Cheese

Combine mayonnaise, basil and lemon juice; set aside.

Pour 1/4 cup dressing over chicken. Preheat grill or broiler. Grill or broil 6 minutes per side or until juices are clear.

Combine lettuce, tomatoes and remaining 1/4 cup dressing. Cut in half; open pockets. Spread mayonnaise mixture inside pita bread pockets. Fill with lettuce mixture. Cut chicken crosswise into 1/2-inch thick slices. Arrange over lettuce mixture; top with cheese.
