Grilled Venetian Chicken Salad
INGREDIENTS
- 4 boneless, skinless chicken breast halves
- 1/3 cup plus 2 Tbsp. Caesar salad dressing, divided
- 10 oz. (6 cups packed) mixed salad greens
- 1-1/2 cups (6 oz.) Sargento® Fancy Shredded Pizza Double Cheese® Cheese, divided
- 1-1/2 cups coarsely chopped fresh tomatoes
- 1/4 cup halved, pitted ripe or kalamata olives
- 1/4 cup sliced drained pepperoncini peppers
- 1 cup garlic croutons (optional)
DIRECTIONS

Brush both sides of chicken with 2 tablespoons dressing. Preheat grill or broiler. Grill chicken 4 to 5 inches from heat source 5 minutes per side or until chicken is cooked through.

Combine salad greens, 1 cup cheese, tomato, olives and peppers in large bowl; toss with remaining 1/3 cup dressing. Arrange on four serving plates.

Slice chicken crosswise into 1/4-inch slices; place on top of salad greens. Sprinkle with remaining cheese. Sprinkle with croutons, if desired
