Tuna Salad Happy Face
INGREDIENTS
- 1 can (12 oz.) solid white tuna in water, drained and flaked
- 1-1/2 cups (6 oz.) Sargento® Pepper Jack Shredded Cheese, divided
- 1/3 cup mayonnaise
- 3 Tbsp. sweet pickle relish
- 8 sweet small pickles or mini dill pickles
- 8 cherry tomatoes or pimiento-stuffed olives
- 2 cucumber slices, halved
- 4 baby carrots
- 1 roasted red pepper, well drained and cut into thin strips
- Crackers or bread (optional)
DIRECTIONS

Combine tuna, 1 cup cheese, mayonnaise and pickle relish. For each serving, mound and flatten 1/2 cup tuna mixture into a 4-inch circle on a serving plate forming a face.

Decorate each face by placing pickles as ears, halved cucumber slices for eyebrows, tomatoes or olives for eyes, carrot for a nose and pepper strips for a mouth. Sprinkle remaining cheese for hair. Serve with crackers or bread, if desired.
